Pork Chop Meals

So I did a Costco run this week on Monday.I didn't even do a meal plan. It was very odd and I kinda feel like my thing was thrown off but none the less it is done. They had pork chops on sale so I got them and needed to figure out something to do with them. The boneless chops at Costco are so thick that I filet them so I end up with double the meat. I was going to take pictures of this one but my camera sucks so all my pictures turned out like crap. Something I will work on. Also my boyfriend was gone so I had the kids tonight. Let me tell you trying to do this with a 3 and 5 year old makes the work take just a little longer but I popped in a movie and sat them down with some popcorn and they were happy campers.

I did 4 meals. 2 for the crockpot and 2 to bake. We are trying to throw a little something different rather than eat out of the crockpot every night so that is where the baked ones came from. So on to google I went. I found 4 recipes that I had everything on hand.
This go around I made,
Low Country Smothered Pork Chops
Slow Cooker BBQ Spareribs
Brown-Sugar Glazed Pork Chops
Breaded Pork Chops

These ones were super easy, all I had to chop was some onions. I had them all put together (even with the kids bugging me for more popcorn) it only took me like 45 minutes to put these all together. They all smelled super yummy and I am really excited about this round.

Then I got a sweet tooth and I have a ton of lemon juice thanks to my in laws so on to lemon bars I went. So now my whole house smells like lemons! Yay!!

I am so sorry for the lack of pictures in this post. I promise there will be some with the chicken meals I plan on doing in the next couple of days.


Today was a nice Saturday.....I started my counceling and I feel really good about it. And we went to a baby shower for some friends so that was a good time too!!

Catching up...

Wow. It has been WAY too long since I posted anything. A lot has happened. I hosted my first Christmas Eve dinner for 16 people. All I can say was that I am so glad I took the day off work and everything turned out AWESOME!!!

This was our first Christmas as a family. Waking up with the kids in the morning was the best feeling ever. We spent the day at Mike's sister's house for breakfast and the evening at his parents. It was a very nice day all in all. But I am so glad it is over.




New Years Eve was kinda blah. But it turned out good. We invited a bunch of people over last minute. Only a few showed and were all gone before midnight. So it ended up just being Mike and I by the bonfire at midnight which was actually pretty awesome. We kind of reflected on the last year and how far we have come and what is in store.
I figured out that I am graduating in June with my bachelors in accounting. It has been a long 3 years and I am over it. But I decided that I am going on for my Masters. It will be worth it because it has been my goal since I started this whole process. Even though I may not fully use it, I am going for my CPA. My goal is to hopefully only work part time doing accounting and doing what I love as a BeachBody coach full time. I have a goal that by the end of the year I will be working closer to home. I hate being so far from my family. I hate that when I get home from work we have dinner and the kids have to go to bed. And then Mike and I only have about a half hour before Mike goes to bed because he get up so early. I am focusing on expanding my business. I see my goal I have my focus. I know that I can do it.

I took Brooklyn to get the first haircut that she will remember. We had a Kassie Brooklyn morning. We went to breakfast, got haircuts and then got our nails done. We had so much fun. And is getting so big.







 It really made me realize that I am establishing the relationship with her that I never had with my own mom. Things have really been coming up a lot lately from my past and I am finally realizing that I need to deal with things. So I start counseling Saturday. I am so thankful that I have Mike in my life. He is such a rock for me and is willing to stick with me through all of my crazy. I never thought that I would find love like his.

I think that is all that has happened. Now that you are all caught up I think I am done rambling :)
